How I Make My Favorite Acai Bowl

Happy Saturday, friends! 

Today, I am spending the day working on all kinds of homework and personal projects, but before I jump into those things, I wanted to share a recipe with you that I made for breakfast! It’s the most perfect choice for weekend breakfasts, late night snacks, and pretty much any other time that fits your schedule! This past week, I was pretty sick with some really bad throat pain. Because of that, I was on a pretty much liquid diet. However, I used some of my sick downtime to perfect my go-to recipe, the acai bowl.

I know that they’ve been around for a while and are only gaining in popularity, but my first time eating one was this past summer when we were in Sedona, Arizona on vacation. The acai bowl I had there was so addicting that I began to search for places in St. Louis that offered them so I could keep my acai bowl habit up. However, I was shocked to find that while there were some restaurants in St. Louis that offered them, they were often priced around $10. For me, that’s a high price to pay for a meal, so I set out on a mission. 

Over Christmas break, I was in Whole Foods when I stumbled upon some Sambazon frozen Acai packets, and I quickly grabbed them up, knowing that I wanted to try my hand at an acai bowl. 

So, the last month or so has been quite the trial and error process of finding the perfect ingredients for my acai bowl. For example, many people recommended that I use apple juice in the bowl to sweeten it, but when I tried this, it was so over the top sweet that I could barely eat the bowl. After plenty of fails, I’ve finally perfected my recipe and I can’t wait to share it with you. 

 

Acai Berry Bowl

Ingredients
  1. 1 Sambazon Frozen Acai Packet
  2. 1 Whole Banana
  3. 1/2 Cup Coconut Water
  4. 1 Handful Frozen Mixed Berries
  5. Granola
  6. Fresh Berries Topping
  7. Honey
  8. Peanut Butter
Before You Start
  1. Slice the banana into small pieces.
  2. Run the acai packet under hot water until it can be broken into smaller pieces.
In the Food Processor
  1. Combine acai packet, banana slices, coconut water, and frozen berries.
  2. Blend until smooth.
  3. Pour into a bowl.
After
  1. Pour granola and fresh berries on top.
  2. Add some honey drizzle and peanut butter drizzle.
  3. Enjoy!

 After reading the directions, you might realize how easy this really is! I love the simplicity of this because I actually can make one for breakfast in the morning, despite my usual “sleep until the last minute” ways. It’s so fun to be able to toss everything into the food processor for a minute or so and then suddenly have a meal right before me. 

After looking at my budget and realizing I don’t have to spend $10 at a restaurant for an acai bowl but make mine for less than half the price, I’ve been looking at other ways I can creatively cut costs when it comes to food! I can’t wait to share some of my other meals that I’ve adapted for a college – student’s budget! Stay tuned for more posts like these coming soon!
